Creamy Cheesy Shrimp Pasta

So ironically, this recipe is one of my most requested but I just realized I didn’t take any pictures only videos! I do apologize for this inconvenience, if you have any questions feel free to reach out.

Oddly, I’m not much of a shrimp lover, but it is a household favourite. This too is another quick and easy enough meal. It takes no more than 30 minutes ( yes!) to prepare and cook. If you have a busy schedule and can’t afford to buy pasta a lot, this is the perfect an thrifty alternative.

You will need:

  • 1 pound seasoned shrimp
  • 1 pack spaghetti
  • 1 tin heavy cream
  • 3 cups cheese( New Zealand)
  • 1 onion
  • 3 tbsp oil
  • 1 tbsp butter
  • 4 cloves garlic finely chopped
  • 2 pimentos finely chopped
  • 1 tbsp green seasoning
  • 1 tbsp oregano
  • 1 tbsp jerk seasoning
  • 1 bundle chadon beni
  • Salt & black pepper to taste
  • Mixed veges (broccoli, cauliflower & carrots)
  • 1 cup water

Method:

In a large skillet, bring 4 quarts of water to a boil and cook spaghetti. While the spaghetti is cooking, heat up 2 tbsp of oil in another pot. Add in the onions, pimentos and chadon beni and sautee for 2 minutes. Next, add in the shrimp, garlic and salt to taste and stir for another couple minutes. Add in your veges,green seasoning and butter and cover the pot for 8 minutes or until your veges are cooked.

Next, add in the tin of heavy cream and water, along with the salt and jerk seasoning. Cook for about 6 minutes, tasting in between ensuring your cream is well salted and flavoured.

By the time this is completed, your spaghetti will be ready to drain. Rinse the pasta under cold water, then add 1 tbsp of oil and mix well. This keeps the pasta from sticking together.

In a large pot, mix the pasta, the creamy shrimp mixture and your three cups of cheese. Once mixture is evenly distributed, serve and garnish lightly with oregano.
